What does an IK10 rating mean and how does it differ from IP65?

They are two different types of protection. The IP65 indicates that the lamp is protected against dust and direct rain. The IK10 is the highest level of resistance to mechanical impacts, meaning the body withstands blows without breaking or deforming.

Is the 360-degree light distribution the only option available on this model?

This model includes the option of symmetrical 360-degree lighting, which distributes the light evenly in all directions around the pole. It is especially useful when the lamp is installed in the center of an open space such as a garden or a walkway.
